Sok od limuna, 2 g

Postupak


  • 1. U malom loncu zagrejte posoljenu vodu do laganog vrenja. Dodajte krompir i kuvajte 8 do 10 minuta, dok ne omekša taman toliko da bude mekan u sredini, a da i dalje zadržava oblik. Dobro ocedite i držite na toplom.


  • 2. Istu vodu ponovo dovedite do laganog vrenja. Dodajte šparglu i kuvajte 2 do 3 minuta, dok ne postane jarko zelena i blago mekana. Tikvicu dodajte tokom poslednjeg 1 minuta. Ocedite oba povrća i ostavite sa strane.


  • 3. Raspolovite rep jastoga uzdužno kroz oklop i meso. Posušite kuhinjskim papirom. Zagrejte tiganj za sotiranje na srednjoj vatri i dodajte rep jastoga, prvo stranom sa oklopom nadole, pa pecite 2 minuta. Okrenite i nastavite pečenje još 2 do 3 minuta, lagano prelivajući sokovima iz tiganja, dok meso ne postane neprozirno, tek blago čvrsto i i dalje sočno. Prebacite na topao tanjir i ostavite da odmori 2 minuta.


  • 4. U maloj šerpi na tihoj vatri otopite puter. Dodajte beli luk i kuvajte 30 sekundi, ne dozvoljavajući da dobije boju. Dodajte pavlaku za kuvanje i lagano krčkajte 2 minuta, uz mešanje, dok sos ne postane gladak i blago zgusnut. Na kraju dodajte sok od limuna. Sos treba da bude sjajan, svetao i dovoljno gust da obloži poleđinu kašike.


  • 5. Krompir, šparglu i tikvicu nakratko vratite u tiganj ili u sos, samo toliko da se ravnomerno zastakle, oko 30 sekundi. Nemojte ih previše obrađivati; treba da ostanu odvojeni i čisti u teksturi.


  • Serviranje i slaganje na tanjir


    Rasporedite krompir kao osnovu na tanjiru, zatim pored njega složite šparglu i tikvicu u urednu liniju. Postavite rep jastoga upadljivo u sredinu ili blago van centra, tako da meso bude izloženo. Kašikom rasporedite sos od putera i pavlake oko jastoga i lagano preko njega, tako da povrće ostane vidljivo, a tanjir skladan, ne preplavljen sosom.
