  • Metode


  • 1. Meng die koringmeel, gis en sout in ’n mengbak. Voeg die lou water by en meng totdat ’n growwe deeg vorm sonder enige droë meel wat oorbly, ongeveer 2 minute.

  • 2. Knie die deeg op ’n skoon oppervlak vir 6 tot 8 minute, totdat dit glad, elasties en nie meer klewerig is nie. Die deeg moet soepel voel en sy vorm hou sonder om te skeur.

  • 3. Plaas die deeg in ’n liggies bedekte bak en laat dit by kamertemperatuur vir 90 minute rys, of totdat dit in volume verdubbel het en lugtig voel om aan te raak.

  • 4. Verhit die oond met ’n pizzasteen of bakstaal in plek tot 290°C vir minstens 30 minute. Die oppervlak moet heeltemal met hitte versadig wees.

  • 5. Meng die tamatiesous, gerasperde knoffel en oregano in ’n klein bakkie. Roer net genoeg om dit eweredig te versprei.

  • 6. Rek die deeg uit in ’n sirkel van ongeveer 28 cm breed, en hou die rand effens dikker as die middel. Plaas dit oor op ’n liggies bebloemde pizzaskop.

  • 7. Smeer die tamatiemengsel in ’n dun, egalige laag oor die deeg en laat ’n skoon rand van 1.5 cm. Versprei die mozzarella, dan die sampioen- en tamatieskywe. Rond af met die olyfolie.

  • 8. Skuif die pizza op die warm steen en bak vir 7 tot 8 minute, totdat die kors diep verbruin is aan die rande, die basis bros is, en die kaas heeltemal gesmelt is met ligte blasies.

  • 9. Haal die pizza uit die oond en laat dit vir 1 minuut staan. Strooi die basiliekruid oor die oppervlak net voor opdiening.
