Inleiding



Hierdie braai is gebou op kontras: diep soutige vark, 'n laklaag van knoffel en chili, en 'n ingehoue soetheid wat die hitte afrond sonder om dit af te stomp. Die resultaat is ferm, aromaties en glansend, met die buitekant gekonsentreerd en die binnekant sappig. Dit is 'n gereg van direkte geure en gedissiplineerde uitvoering.

    Vark en marinade



  • 1000 g vark

  • 25 g knoffel, fyn gerasper

  • 45 g sojasous

  • 30 g bruinsuiker

  • 35 g chili-pasta

  • 20 g groente-olie

  • 3 g swartpeper

  • 4 g paprika


  • Metode



  • 1. Meng die knoffel, sojasous, bruinsuiker, chili-pasta, groente-olie, swartpeper en paprika in 'n mengbak. Roer totdat die suiker oplos en die mengsel glad en samehangend word.


  • 2. Voeg die vark by en draai dit deeglik in die marinade, en druk die mengsel in die oppervlak in. Bedek en marineer vir 30 minute by kamertemperatuur, en draai dit een keer halfpad deur. Die vark moet egalig bedek wees en sigbaar gekleur wees deur die geurmiddels.


  • 3. Verhit die oond tot 190°C. Plaas die vark op 'n draadrak oor die braaipan, sodat oortollige marinade ondertoe kan drup. Hou enige oorblywende marinade in die bak terug.


  • 4. Braai vir 55 tot 65 minute, en bedruip een of twee keer met die teruggehoue marinade gedurende die eerste helfte van die gaarmaaktyd. Die buitekant moet verdonker tot 'n diep mahoniekleur terwyl dit glansend bly.


  • 5. Toets die middel met 'n kitslees-termometer. Haal die vark uit wanneer die binnetemperatuur 68°C bereik. Laat dit vir 15 minute rus; die temperatuur sal styg en die vleis sal ontspan.


  • 6. Sny dwars oor die grein in egalige skywe. Die vleis moet sappig, lig ferm en egalig gegeur deur die buitenste lae wees, met 'n skoon knoffel-chili-aroma.


  • Uitplatering en bediening



    Rangskik die gesnyde vark in 'n netjiese oorvleueling op verhitte borde. Skep enige pansappe liggies oor die vleis en hou die aanbieding skoon, sodat die gelakte oppervlak sigbaar bly. Bedien met die glasuur op die vark gekonsentreer, nie daaronder opgegaar nie.
