Metode


  • 1. Plaas ’n groot swaar pan oor medium-hoë hitte. Voeg die maalvleis by, geur met die sout en swartpeper, en kook vir 6 tot 8 minute terwyl jy dit in klein, egalige stukkies opbreek. Die beesvleis moet sy rou kleur verloor en ’n diepbruin rand kry; enige vog moet verdamp en die pan met gekonsentreerde aanbaksels laat.


  • 2. Voeg die botter, ui en seldery by die beesvleis. Kook vir 4 tot 5 minute oor medium hitte en roer aanhoudend totdat die ui deurskynend is en die seldery sag geword het sonder om inmekaar te val.


  • 3. Voeg die sampioen by en kook nog 4 minute. Die sampioene moet hul vog vrystel en dan begin glansend en liggies verbruin. Voeg die knoffel by en kook vir 30 sekondes, net totdat dit geurig is.


  • 4. Voeg die aartappelgnocchi by en roer om dit met die vet en vleissappe te bedek. Kook vir 2 minute en laat die gnocchi ’n bietjie kleur aan die rande kry.


  • 5. Giet die dik room in en bring die pan oor medium hitte tot ’n sagte prut. Kook vir 4 tot 6 minute en roer af en toe totdat die room liggies verdik en aan die gnocchi en beesvleis kleef. Die sous moet soepel en samehangend wees, nie loperig nie, en die gnocchi moet deurgaans sag wees.


  • 6. Proe en pas slegs indien nodig aan met ’n klein ekstra knippie sout of swartpeper uit die genoemde geurmiddels, verwyder dan van die hitte. Laat die pan vir 1 minuut staan sodat die sous tot ’n gladde, glansende afwerking kan set.
