Inleiding


Hierdie gereg is gebou op kontras: sagte gnocchi, diep verbruin beesvleis, en broccoli wat net ferm genoeg gehou word om sy groen soetheid te behou. Metode


  • 1. Bring ’n medium kastrol met gesoute water tot kookpunt. Voeg die broccoli by en kook vir 2 minute, net totdat dit helder groen en skaars sag is. Skep dit dadelik uit en dreineer goed. Die blommetjies moet ferm en helder bly.


  • 2. Bring die water weer tot kookpunt en kook die gnocchi vir 2 tot 3 minute, totdat dit na die oppervlak styg en sag voel maar steeds veerkragtig is. Dreineer deeglik en hou eenkant.


  • 3. Plaas ’n groot soteerpan oor medium-hoë hitte. Voeg die olyfolie en botter by. Wanneer die botter skuim, voeg die ui by en kook vir 4 tot 5 minute, roer gereeld, totdat dit deurskynend en liggies goudbruin aan die rande is.


  • 4. Voeg die knoffel by en kook vir 30 sekondes, net totdat dit geurig is. Voeg die maalvleis by en geur met die sout en swartpeper. Breek die vleis op en kook vir 6 tot 8 minute, totdat dit goed verbruin is en daar min vog in die pan oorbly. Die beesvleis moet diep hartig wees, nie grys nie.


  • 5. Voeg die broccoli by en kook vir 1 minuut, terwyl jy dit omgooi om dit met die vet en beesvleissappe te bedek.


  • 6. Giet die dik room in en bring tot ’n sagte prut. Kook vir 2 tot 3 minute, terwyl jy roer, totdat die sous liggies verdik en die agterkant van ’n lepel bedek.


  • 7. Voeg die gnocchi en Parmesan by. Vou versigtig vir 1 tot 2 minute oor lae hitte totdat die kaas smelt en die sous glansend word en eweredig aan elke stukkie kleef. Die finale tekstuur moet romerig wees, nie loperig nie, met die gnocchi ongeskonde.
