  • Beesvleis, fyn gemaal: 55 g

  • Varkvleis, fyn gemaal: 35 g

  • Broodkrummels: 10 g

  • Eier, geklits: 15 g

  • Ui, baie fyn gerasper: 8 g

  • Sout: 1 g

  • Swartpeper, fyn gemaal: 0.5 g

  • Plantaardige olie: 8 g


  • Metode



  • 1. Plaas die aartappels vir 10 minute in koue water, dreineer dan deeglik en droog dit heeltemal af met 'n skoon doek. Die oppervlak moet droog wees voor braai, anders sal die friet sag word en oormatig spat.


  • 2. Meng die beesvleis, varkvleis, broodkrummels, eier, ui, sout en swartpeper in 'n bak. Meng net totdat die massa egalig gebind en samehangend is, ongeveer 1 minuut. Vorm 6 klein frikkadelle van gelyke grootte, elk stewig maar nie saamgepers nie.


  • 3. Verhit die plantaardige olie vir die friet in 'n diep kastrol tot 170°C. Braai die aartappelstafies in sarsies vir 4 tot 5 minute, totdat dit liggoud is en net begin ferm word. Skep uit en dreineer op die uitgevoerde skinkbord.


  • 4. Verhoog die olietemperatuur tot 185°C. Plaas die friet terug in die olie en braai nog 2 tot 3 minute, totdat dit diep goudkleurig, bros aan die rande en hoorbaar bros is wanneer dit opgelig word. Dreineer onmiddellik en geur met die sout terwyl dit nog warm is.


  • 5. Verhit 8 g plantaardige olie in die braaipan oor medium-hoë hitte. Voeg die frikkadelle by en gaar vir 6 tot 8 minute, draai gereeld, totdat dit egalig aan alle kante verbruin en deurgaar is. Die buitekant moet goed gekleur wees, terwyl die middel sappig bly en nie meer pienk is nie.


  • 6. Laat die frikkadelle vir 2 minute op die skinkbord rus. Dit laat die sappe setel en behou die sagtheid.

    Rangskik die friet in 'n kompakte hopie aan die een kant van die bord en plaas die frikkadelle langsaan in 'n netjiese lyn. Bedien onmiddellik, terwyl die friet bros bly en die frikkadelle warm en sag is. Die voltooide bord moet gedissiplineerd en reguit voorkom, met elke element duidelik onderskei.
