Postupak


  • 1. Stavite veliku tešku tavu na srednje jaku vatru. Dodajte mljevenu govedinu, začinite solju i crnim paprom te kuhajte 6 do 8 minuta, razbijajući meso na male, ujednačene komade. Govedina treba izgubiti sirovu boju i dobiti duboko smeđe rubove; sva vlaga treba ispariti, ostavljajući na tavi koncentrirane zapečene sokove.


  • 2. Dodajte maslac, luk i celer u govedinu. Kuhajte 4 do 5 minuta na srednjoj vatri, uz stalno miješanje, dok luk ne postane staklast, a celer omekša bez raspadanja.


  • 3. Dodajte gljive i kuhajte još 4 minute. Gljive trebaju pustiti svoju vlagu, a zatim postati sjajne i lagano posmeđiti. Dodajte češnjak i kuhajte 30 sekundi, samo dok ne zamiriše.


  • 4. Dodajte krumpirove njoke i promiješajte da se oblože masnoćom i mesnim sokovima. Kuhajte 2 minute, dopuštajući da njoki na rubovima dobiju malo boje.


  • 5. Ulijte vrhnje za šlag i dovedite sadržaj tave do laganog vrenja na srednjoj vatri. Kuhajte 4 do 6 minuta, povremeno miješajući, dok se vrhnje lagano ne zgusne i ne obloži njoke i govedinu. Umak treba biti podatljiv i povezan, ne rijedak, a njoki trebaju biti mekani do sredine.


  • 6. Kušajte i po potrebi prilagodite okus malim dodatnim prstohvatom soli ili crnog papra od navedenih začina, zatim maknite s vatre. Ostavite tavu da odstoji 1 minutu kako bi se umak slegnuo u gladak, sjajan završetak.
