  • Postupak


  • 1. Pileća prsa posušite tapkanjem i ravnomjerno začinite s 2 g soli i 1 g crnog papra. Ostavite da odstoje 5 minuta kako bi začini počeli prodirati u površinu.

  • 2. Stavite tavu za pirjanje na srednje jaku vatru. Dodajte maslinovo ulje i 6 g maslaca. Kad se maslac zapjeni pa se pjena smiri, položite pileća prsa u tavu. Pecite 3 minute s prve strane, zatim 2 do 3 minute s druge, dok lagano ne porumene, a meso na dodir ne bude elastično, ali još uvijek podatno. Prebacite na tanjur i držite na toplom.

  • 3. Smanjite vatru na srednju. Dodajte preostalih 6 g maslaca, zatim luk. Kuhajte 2 minute, stalno miješajući, dok ne postane staklast i mirisan, ali bez boje.

  • 4. Dodajte češnjak i kuhajte 20 sekundi, samo dok ne zamiriše. Dodajte gljive i prstohvat preostale soli. Kuhajte 4 do 5 minuta, povremeno miješajući, dok gljive ne otpuste svoju vlagu i ne počnu dobivati zlatne rubove.

  • 5. Ulijte vrhnje za kuhanje i lagano ga zakuhajte. Kuhajte 2 do 3 minute, miješajući, dok umak lagano ne obloži stražnju stranu žlice i ne dobije podatnu, sjajnu konzistenciju. Začinite preostalom soli i crnim paprom.

  • 6. Vratite piletinu i sav sok koji je pustila natrag u tavu. Žlicom prelijte umak preko piletine i lagano kuhajte 1 minutu, samo dok se piletina potpuno ne zagrije i umak ne prione u glatkom sloju. Piletina treba ostati sočna i potpuno neprozirna u sredini.

    Stavite piletinu malo izvan središta na zagrijani tanjur i prelijte je kremastim umakom od gljiva. Rasporedite gljive ravnomjerno preko i oko prsa tako da umak djeluje promišljeno poslužen, a ne razliven. Poslužite odmah, dok je umak još sjajan, a piletina ostaje mekana.
