  • 1. Letakkan dada ayam di atas papan dan kemaskan potongannya. Belah secara mendatar jika perlu, kemudian leperkan secara sekata hingga ketebalan kira-kira 8 mm. Permukaannya hendaklah seragam, tanpa bahagian tepi yang koyak.

  • 2. Perasakan ayam pada kedua-dua belah dengan garam, lada hitam, dan paprika, dengan sapuan yang ringan dan sekata.

  • 3. Sediakan tiga mangkuk cetek. Masukkan tepung ke dalam mangkuk pertama. Pukul telur dalam mangkuk kedua hingga benar-benar cair dan licin.

  • 7. Alihkan cutlet ke atas tuala kertas selama 1 minit untuk menyingkirkan lebihan minyak. Keraknya hendaklah kekal rangup, tidak berminyak, dan ayam hendaklah terasa pejal namun masih berjus apabila ditekan ringan.
