  • Postopek



  • 1. Pripravite testo. V posodi zmešajte pšenično moko, vodo, kvas in sol. Mešajte, dokler ne ostane nič suhe moke, nato gnetite 6 do 8 minut, da testo postane gladko, elastično in le rahlo lepljivo. V zadnji minuti vdelajte oljčno olje, dokler se popolnoma ne vpije.


  • 2. Pustite testo počivati. Pokrijte in pustite počivati 15 minut pri sobni temperaturi. Testo se mora opazno sprostiti in ohraniti mehko, raztegljivo strukturo.


  • 3. Pripravite pečico. Pečico segrejte na 250°C; če uporabljate kamen ali jekleno ploščo za peko, naj bo v pečici že med segrevanjem. Za popolno pregrevanje pustite vsaj 20 minut.


  • 4. Oblikujte osnovo. Na rahlo pomokani površini testo raztegnite v krog premera 30 cm, pri čemer naj bo rob nekoliko debelejši od sredine. Testo mora ostati voljno in enakomerno tanko, brez trganja.


  • 5. Obložite pico. Osnovo prenesite na pladenj ali lopar. Enakomerno razporedite paradižnikovo omako in pustite ozek rob. Dodajte mocarelo, nato po površini razporedite gobe in češnjeve paradižnike. Zaključite z oljčnim oljem, origanom in črnim poprom.


  • 6. Specite. Pecite 8 do 10 minut, dokler rob ni zapečen, osnova povsem pečena, mocarela pa stopljena z rahlo zlatimi lisami. Paradižniki se morajo zmehčati, vendar ohraniti obliko; gobe morajo biti mehke in rahlo zapečene.


  • 7. Zaključite z baziliko. Pico vzemite iz pečice in po površini takoj potresite baziliko. Pred rezanjem jo pustite stati 1 minuto, da se sir umiri in struktura ostane čvrsta.


  • Serviranje in postrežba



    Pico postrezite celo, nato jo narežite na čiste kose. Sredina mora ostati lahka, rob pa izrazit in zračen, medtem ko morajo obloge ostati razločne, namesto da bi se združile v odvečno vlago. Postrezite vročo, z baziliko, ki je še vedno živahna, in sirom, ki se je ravno ustalil.
