  • Postopek



  • 1. Majhen pravokoten model ali model za ploščico obložite s papirjem za peko. Postavite na stran. Model naj sprejme končno ploščico teže 55 g z urejenim, kompaktnim profilom.


  • 2. V majhni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, izolat sojinih beljakovin, koncentrat sirotkinih beljakovin, polidekstrozo, sladila in sol. Presejte ali temeljito stepajte 1 minuto, dokler mešanica ni enotna in brez vidnih grudic.


  • 3. Suhi mešanici dodajte glicerol in naravno aromo. Z lopatko mešajte 1 do 2 minuti, dokler se masa ne začne povezovati ter postane gladka, gosta in rahlo sijoča.


  • 4. V ločeni skledi zmešajte hrustljavi riž, pšenično moko in sončnično olje. Nežno premešajte, da so zrna rahlo obdana in da se mešanica poveže, ne da bi postala mokra. To hrustljavo mešanico vmešajte v proteinsko osnovo, le toliko, da se enakomerno porazdeli, pri tem pa ohranite hrustljavo strukturo.


  • 5. Mešanico za ploščico trdno vtisnite v pripravljen model. Stiskajte jo po plasteh, da površina postane ravna, notranjost pa kompaktna, brez zračnih žepov. Hladite 10 minut, dokler ploščica ni dovolj čvrsta, da jo lahko lepo vzamete iz modela.


  • 6. V toplotno odporni skledi, postavljeni nad komaj vrelo vodo, skupaj stopite olje palmovih jedrc, kakavovo maslo, kakavovo maso in emulgator lecitin ter mešajte, dokler ni zmes popolnoma gladka in tekoča. Preliv mora biti sijoč in povsem homogen, brez vidnih delcev kakavove mase.


  • 7. Ohlajeno ploščico vzemite iz modela in jo položite na pladenj, obložen s papirjem za peko.     Ploščico postavite na sredino ozkega krožnika ali majhne deske, obložene s papirjem za peko. Predstavitev naj bo zadržana in natančna, tako da jasno pridejo do izraza sijoč preliv in hrustljav profil. Za najčistejši kontrast tekstur postrezite rahlo ohlajeno.
