Postopek


  • 1. Majhen lonec osoljene vode segrejte do rahlega vretja. Dodajte krompir in kuhajte 8 do 10 minut, dokler ni ravno prav mehak v sredini, a še vedno ohranja obliko. Dobro odcedite in ohranite toplo.


  • 2. Isto vodo znova segrejte do rahlega vretja. Dodajte beluše in kuhajte 2 do 3 minute, da postanejo živo zeleni in rahlo mehki. Zadnjo 1 minuto dodajte bučko. Obe vrsti zelenjave odcedite in postavite na stran.


  • 3. Jastogov rep po dolžini prerežite skozi oklep in meso. Popivnajte do suhega. Ponev za sotiranje segrejte na srednji temperaturi in dodajte jastogov rep, najprej s stranjo oklepa navzdol, ter pecite 2 minuti. Obrnite in nadaljujte še 2 do 3 minute, pri tem ga rahlo prelivajte s sokovi iz ponve, dokler meso ni neprosojno, ravno prav čvrsto in še vedno sočno. Preložite na topel krožnik in pustite počivati 2 minuti.


  • 4. V majhni kozici na nizki temperaturi stopite maslo. Dodajte česen in kuhajte 30 sekund, ne da bi se obarval. Dodajte smetano za stepanje in nežno kuhajte 2 minuti, med mešanjem, dokler omaka ni gladka in rahlo zgoščena. Na koncu dodajte limonin sok. Omaka mora biti sijoča, svetla in dovolj gosta, da prekrije hrbtno stran žlice.


  • 5. Krompir, beluše in bučko na kratko vrnite v ponev ali omako, le toliko, da se enakomerno glazirajo, približno 30 sekund. Z njimi ne ravnajte preveč; po teksturi morajo ostati razločni in čisti.


  • Serviranje in postavitev na krožnik


    Krompir razporedite kot osnovo krožnika, nato ob njem v urejeni liniji položite beluše in bučko. Jastogov rep postavite izrazito na sredino ali rahlo izven sredine, z razkritim mesom. Masleno smetanovo omako nalijte okoli in rahlo čez jastoga, pri tem pa naj zelenjava ostane vidna in krožnik sestavljen, ne preplavljen.
