Postopek


  • 1. Veliko težko ponev postavite na srednje močan ogenj. Dodajte mleto goveje meso, začinite s soljo in črnim poprom ter kuhajte 6 do 8 minut, pri tem pa meso razdrobite na majhne, enakomerne koščke. Meso mora izgubiti surovo barvo in na robovih dobiti globoko rjavo zapečenost; vsa vlaga mora izhlapeti, tako da na dnu ponve ostane koncentrirana zapečena osnova.


  • 2. K mesu dodajte maslo, čebulo in zeleno. Na srednjem ognju kuhajte 4 do 5 minut in enakomerno mešajte, dokler čebula ne postekleni in se zelena zmehča, ne da bi razpadla.


  • 3. Dodajte gobe in kuhajte še 4 minute. Gobe morajo spustiti svojo vlago, nato pa postati sijoče in rahlo zapečene. Dodajte česen in kuhajte 30 sekund, le toliko, da zadiši.


  • 4. Dodajte krompirjeve njoke in premešajte, da se obdajo z maščobo in mesnimi sokovi. Kuhajte 2 minuti, da njoki na robovih dobijo malo barve.


  • 5. Prilijte sladko smetano in na srednjem ognju jed v ponvi nežno zavrite. Kuhajte 4 do 6 minut, občasno premešajte, dokler se smetana rahlo ne zgosti in oprime njokov ter mesa. Omaka mora biti voljna in povezana, ne redka, njoki pa morajo biti povsem mehki.


  • 6. Poskusite in po potrebi prilagodite okus le z majhnim dodatnim ščepcem soli ali črnega popra iz navedenih začimb, nato ponev odstavite z ognja. Pustite stati 1 minuto, da se omaka umiri v gladek, sijoč zaključek.
