Postopek


  • 1. V srednje velikem loncu zavrite osoljeno vodo. Dodajte brokoli in kuhajte 2 minuti, le toliko, da postane živo zelen in komaj mehak. Takoj ga poberite iz vode in dobro odcedite. Cvetke morajo ostati čvrste in izrazite barve.


  • 2. Vodo ponovno zavrite in skuhajte njoke 2 do 3 minute, dokler ne priplavajo na površje in so mehki, vendar še vedno prožni. Temeljito jih odcedite in postavite na stran.


  • 3. Veliko ponev za sotiranje postavite na srednje močan do močan ogenj. Dodajte olivno olje in maslo. Ko se maslo speni, dodajte čebulo in jo med pogostim mešanjem kuhajte 4 do 5 minut, dokler ne postekleni in na robovih rahlo pozlati.

  • 6. Prilijte smetano za kuhanje in jo nežno zavrite. Kuhajte 2 do 3 minute, med mešanjem, dokler se omaka rahlo ne zgosti in ne prekrije hrbtne strani žlice.


  • 7. Dodajte njoke in parmezan. Na nizkem ognju previdno premešajte 1 do 2 minuti, dokler se sir ne stopi in omaka ne postane sijoča ter se enakomerno oprime vsakega kosa. Končna tekstura mora biti kremasta, ne redka, njoki pa morajo ostati celi.

    Njoke razdelite v ogrete plitve sklede, pri tem pa poskrbite za enakomerno porazdelitev govedine in brokolija. Po vrhu naložite omako, da se jed oblikuje v gladek, povezan kupček s čistim sijajem. Po želji zaključite z dodatnim obratom mlinčka črnega popra in postrezite takoj.
