Uvod


Moqueca je enolončnica tihe moči: živahna zaradi limete, zaokrožena s kokosovim mlekom in privzdignjena s čisto sladkostjo bele ribe. Njen uspeh je odvisen od zadržanosti pri rahlem vretju, da riba ostane mehka in jušna osnova živahna, ne pa težka. Če je pripravljena pravilno, nastane kot popolna jed, dišeča, uravnotežena in nedvomno brazilska.

  • Koriander, listi in nežna stebla, sesekljan — 12 g


  • Postopek


  • 1. V skledi zmešajte belo ribo, limetin sok in sol. Nežno obrnite, da se vse prekrije, in pustite stati 10 minut. Riba se mora ob robovih začeti rahlo učvrščevati, pri tem pa ostati sijoča in cela.


  • 2. 24 cm ponev za sotiranje postavite na srednji ogenj in dodajte oljčno olje. Dodajte čebulo in česen ter kuhajte 4 minute, ob stalnem mešanju, dokler čebula ne postekleni in česen zadiši, vendar ne porjavi.


  • 3. Dodajte papriko in paradižnik. Kuhajte 5 minut, občasno premešajte, dokler se paradižnik ne začne razkrajati in zelenjava ne tvori rahlo omakaste osnove.


  • 4. Prilijte kokosovo mleko in dodajte preostalo sol. Na srednje nizkem ognju zavrite do nežnega vretja in kuhajte 3 minute. Tekočina mora delovati povezana in rahlo zgoščena, nikoli pa ne sme močno vreti.


  • 5. Ribe in limetin sok iz marinade razporedite v eni plasti v ponev. Pokrijte in kuhajte 4 do 5 minut, odvisno od debeline, dokler riba ne postane neprosojna in se na sredini lepo lističasto loči, vendar še vedno ohrani vlažno, svilnato teksturo.


  • 6. Odstavite z ognja in vmešajte koriander. Enolončnico pustite stati 1 minuto, da zelišča odišavijo jušno osnovo, ne da bi izgubila svežino.


  • Serviranje


    Enolončnico naložite v ogrete plitve sklede, pri čemer ribo in jušno osnovo enakomerno razdelite. Končni krožnik mora pokazati ribo, ugnezdeno v živahni omaki koralnega tona, s koriandrom, razporejenim po površini, ne pa skritim pod njo. Postrezite takoj, ko je jušna osnova še vroča in riba ostane mehka.
