Uvod



Ta pica temelji na zadržanosti: voljno pšenično testo, čista paradižnikova osnova in kratko pečenje pri visoki temperaturi, ki ohrani svežino obloge. Gobe prinesejo globino, češnjevi paradižniki svežino, mocarela pa vse poveže z odmerjeno bogatostjo. Iz pečice mora priti lahka v sredini, mehurjasta po robu in dišeča po baziliki in oljčnem olju.

  • Postopek



  • 1. V posodi za mešanje združite pšenično moko, kvas in sol. Dodajte vodo in mešajte, dokler ne nastane grobo testo, nato dodajte oljčno olje in gnetite 8 do 10 minut, da postane gladko, elastično in rahlo lepljivo. Testo se mora raztezati brez trganja in pod roko delovati voljno.


  • 2. Testo pokrijte in ga pustite počivati pri sobni temperaturi 90 minut oziroma dokler se vidno ne poveča in sprosti. Ohraniti mora mehak kupolast vrh in biti zračno na rahel pritisk.


  • 3. Pečico segrejte na 250°C, v njej pa naj bo kamen ali jeklena plošča za peko vsaj 30 minut. Površina mora biti popolnoma prepojena s toploto, da se dno hitro zapeče in rob lepo naraste.


  • 4. Gobe in češnjeve paradižnike dajte v manjšo skledo. Začinite z origanom in črnim poprom ter premešajte z 2 g oljčnega olja. Na kratko postavite na stran, da se začimbe oprimejo, ne da bi izvlekle preveč vlage.


  • 5. Na rahlo pomokani površini oblikujte testo v 30 cm velik krog, pri čemer naj bo rob nekoliko debelejši od sredine. Prenesite na pladenj ali lopar. Testo mora ostati raztegljivo, ne stisnjeno.


  • 6. Paradižnikovo omako enakomerno razporedite po sredini, pri tem pa pustite ozek rob čist. Po omaki razporedite mocarelo, nato enakomerno po površini razporedite gobe in češnjeve paradižnike. Zaključite s preostalim oljčnim oljem.


  • 7. Pecite 8 do 10 minut, dokler ni skorja mehurjasta in na robovih močno zlato zapečena, dno čvrsto, mocarela pa stopljena z nekaj bledimi lisami barve. Paradižniki se morajo zmehčati, vendar ostati razločni, gobe pa morajo biti mehke, ne da bi se sesedle.


  • 8. Pico vzemite iz pečice in po površini takoj potresite baziliko. Pred rezanjem jo pustite stati 1 minuto, da se sir umiri in skorja ostane hrustljava.


  • Serviranje



    Pico prenesite na desko ali raven krožnik in jo narežite na čiste kose. Postrezite takoj, ko je bazilika še živo zelena in rob slišno hrustljav, sredina pa voljna, vendar ne mokra.
