Uvod

  • Postopek


  • 1. V posodi za mešanje združite pšenično moko, kvas in sol. Dodajte mlačno vodo in mešajte, dokler ne nastane grobo testo brez ostankov suhe moke, približno 2 minuti.

  • 2. Testo gnetite na čisti površini 6 do 8 minut, dokler ni gladko, elastično in se ne lepi več. Testo mora biti voljno in obdržati obliko, ne da bi se trgalo.

  • 3. Testo položite v rahlo pokrito posodo in ga pustite vzhajati pri sobni temperaturi 90 minut oziroma dokler se volumen ne podvoji in je na otip zračno.

  • 4. Pečico s kamnom za pico ali jekleno ploščo za peko segrevajte na 290°C vsaj 30 minut. Površina mora biti popolnoma prepojena s toploto.

  • 5. V manjši posodi zmešajte paradižnikovo omako z naribanim česnom in origanom. Premešajte le toliko, da se enakomerno porazdeli.

  • 6. Testo raztegnite v krog s premerom približno 28 cm, pri čemer naj bo rob nekoliko debelejši od sredine. Prenesite ga na rahlo pomokan lopar za pico.

  • 7. Paradižnikovo mešanico razporedite po testu v tanki, enakomerni plasti, pri tem pa pustite čist rob širok 1.5 cm. Razporedite mocarelo, nato rezine gob in paradižnika. Zaključite z oljčnim oljem.

  • 8. Pico prenesite na vroč kamen in pecite 7 do 8 minut, dokler skorja na robovih ni močno zapečena, dno hrustljavo, sir pa popolnoma stopljen z rahlimi mehurji.

  • 9. Pico vzemite iz pečice in jo pustite stati 1 minuto. Tik pred serviranjem po vrhu potresite baziliko.


  • Serviranje in postrežba


    Pico prenesite na desko ali topel servirni krožnik in jo narežite na 4 do 6 enakomernih kosov. Skorja mora ostati hrustljava na robu, mehka v sredini in rahlo mehurjasta pod oblogo. Postrezite takoj, ko je sir še tekoč in bazilika dišeča.
