  • Postopek



  • 1. Krompir dajte za 10 minut v hladno vodo, nato ga temeljito odcedite in popolnoma osušite s čisto krpo. Površina mora biti pred cvrtjem suha, sicer se bo pomfrit zmehčal in preveč škropil.


  • 2. V skledi združite govedino, svinjino, krušne drobtine, jajce, čebulo, sol in črni poper. Mešajte le toliko časa, da je masa enakomerno povezana in kompaktna, približno 1 minuto. Oblikujte 6 majhnih mesnih kroglic enake velikosti, vsako čvrsto, vendar ne stisnjeno.


  • 3. Rastlinsko olje za pomfrit v globoki kozici segrejte na 170°C. Krompirjeve palčke cvrite v serijah 4 do 5 minut, da postanejo bledo zlate in se šele začnejo utrjevati. Poberite jih ven in odcedite na obloženem pladnju.


  • 4. Temperaturo olja zvišajte na 185°C. Pomfrit vrnite v olje in cvrite še 2 do 3 minute, da postane globoko zlato zapečen, hrustljav na robovih in ob dvigu slišno krhek. Takoj odcedite in še vročega začinite s soljo.


  • 5. V ponvi na srednje močnem do močnem ognju segrejte 8 g rastlinskega olja. Dodajte mesne kroglice in jih pecite 6 do 8 minut, pri tem jih redno obračajte, da enakomerno porjavijo po vseh straneh in se do konca spečejo. Zunanjost mora biti lepo obarvana, sredica pa ostati sočna in ne več rožnata.


  • 6. Mesne kroglice pustite počivati 2 minuti na pladnju. Tako se sokovi umirijo in ohrani se mehkoba.

    Pomfrit razporedite v kompakten kupček na eno stran krožnika, mesne kroglice pa položite poleg v čisto linijo. Postrezite takoj, dokler pomfrit ostane hrustljav in so mesne kroglice vroče ter mehke. Končni krožnik mora delovati disciplinirano in neposredno, pri čemer je vsak element jasno ločen.
