  • Postupak


  • 1. Po potrebi obložite kalup za pločicu od 55 g uskom trakom papira za pečenje radi lakšeg vađenja. U maloj posudi pomešajte mlečni protein, hidrolizat kolagena, polidekstozu, punomasno mleko u prahu, so i aromu. Mešajte temeljno 30 sekundi, dok se praškasti sastojci ravnomerno ne rasporede i ne ostanu svetle pruge.


  • 2. U posudi otpornoj na toplotu postavljenoj iznad vode koja jedva vri, zajedno otopite kakao-maslac i ulje palminog jezgra 2 do 3 minuta, mešajući dok smesa ne postane potpuno tečna i bistra. Sklonite sa toplote, pa umešajte glicerol i zaslađivač dok smesa ne postane glatka i sjajna.


  • 3. Dodajte suvu mešavinu u otopljene masnoće u dve ture, snažno mešajući nakon svakog dodavanja. Radite dok se ne formira gusta pasta, zatim umešajte seckani kikiriki i sojin crisp. Masa treba da bude kompaktna, blago lepljiva i da se drži zajedno kada se pritisne.


  • 4. Čvrsto utisnite smesu u pripremljeni kalup u ravnomernom sloju. Sabijte je špatulom dok površina ne bude ravna, a ivice kompaktne. Hladite 30 minuta, ili dok se pločica potpuno ne stegne i ne izlazi iz kalupa čisto, bez deformacije.


  • Serviranje i posluživanje


    Izvadite pločicu iz kalupa i poslužite je celu na uskom tanjiru ili u omotu. Površina treba da ostane uredna i kompaktna, sa vidljivim komadićima kikirikija kroz masu. Poslužite rashlađeno ili na hladnoj sobnoj temperaturi za najčistiji zalogaj i najizraženiju teksturu.
