  • Postupak



  • 1. Pomešajte pšenično brašno, šećer, kvasac i prašak za pecivo u posudi za mešanje. Dodajte svinjsku mast i utrljajte je u suve sastojke dok se ravnomerno ne rasporedi i smesa ne postane blago peskasta.


  • 2. Dodajte vodu i mešajte dok se ne formira grubo testo. Mesite 8 minuta, dok ne postane glatko, elastično i više se ne lepi. Pokrijte i ostavite da odmara 45 minuta, ili dok testo primetno ne poveća zapreminu i ne postane lagano na dodir.


  • 3. Dok testo odmara, pripremite nadev. Stavite pečenu svinjetinu sa roštilja, soja sos, oyster sauce, šećer, kukuruzni skrob, vodu i susamovo ulje u malu šerpu. Kuvajte na srednjoj vatri 3 do 4 minuta, neprestano mešajući, dok se smesa ne zgusne u sjajnu pastu koja se uredno drži zajedno. Prebacite na tanjir i potpuno ohladite.


  • 4. Podelite testo na 3 jednaka dela. Oblikujte svaki deo u glatku kuglu, zatim spljoštite i razvucite u krug prečnika približno 10 cm, tako da sredina bude malo deblja od ivice.


  • 5. Podelite ohlađeni nadev na 3 jednaka dela. Stavite jedan deo u sredinu svakog kruga, zatim skupite testo oko nadeva i čvrsto stisnite da zatvorite. Okrenite svaku zemičku spojem nadole i ostavite da odmara 10 minuta pod laganim pokrivačem.


  • 6. Isecite 3 kvadrata papira za pečenje i stavite zemičke na njih, ostavljajući razmak između svake. Kuvajte na pari iznad aktivno ključale vode 12 minuta na srednje jakoj do jakoj vatri. Držite poklopac zatvoren sve vreme. Kada su gotove, zemičke treba da budu narasle, blede i elastične, sa glatkom površinom i bez vlažnih mesta.


  • 7. Sklonite posudu za kuvanje na pari sa vatre i ostavite zemičke da stoje, poklopljene, 2 minuta pre vađenja. To sprečava naglo sleganje i čuva meku sredinu.
