Postupak


  • 1. U srednjoj šerpi zakuvajte posoljenu vodu. Dodajte brokoli i kuvajte 2 minuta, samo dok ne postane jarko zelen i jedva omekša. Odmah ga izvadite i dobro ocedite. Cvetići treba da ostanu čvrsti i živopisni.


  • 2. Vratite vodu do ključanja i kuvajte njoke 2 do 3 minuta, dok ne isplivaju na površinu i ne omekšaju, ali i dalje zadrže blagu čvrstinu. Dobro ih ocedite i ostavite sa strane.


  • 3. Stavite veliki tiganj za sotiranje na srednje jaku vatru. Dodajte maslinovo ulje i puter. Kada puter zapeni, dodajte crni luk i kuvajte 4 do 5 minuta, često mešajući, dok ne postane staklast i blago zlatan po ivicama.


  • 4. Dodajte beli luk i kuvajte 30 sekundi, samo dok ne zamiriše. Dodajte mlevenu govedinu i začinite solju i crnim biberom. Usitnite meso i kuvajte 6 do 8 minuta, dok dobro ne porumeni i u tiganju ostane vrlo malo tečnosti. Govedina treba da bude duboko zapečena i puna ukusa, ne siva.


  • 5. Dodajte brokoli i kuvajte 1 minut, mešajući da se obloži masnoćom i sokovima od mesa.


  • 6. Sipajte pavlaku za kuvanje i dovedite do blagog vrenja. Kuvajte 2 do 3 minuta, mešajući, dok se sos blago ne zgusne i ne obloži poleđinu kašike.


  • 7. Dodajte njoke i Parmezan. Pažljivo promešajte 1 do 2 minuta na tihoj vatri, dok se sir ne istopi, a sos ne postane sjajan i ravnomerno se ne zalepi za svaki komad. Završna tekstura treba da bude kremasta, ne retka, a njoki treba da ostanu celi.

    Rasporedite njoke u zagrejane plitke činije, vodeći računa da govedina i brokoli budu ravnomerno raspoređeni. Kašikom prelijte sos odozgo tako da se jelo slegne u glatku, povezanu gomilicu sa čistim sjajem. Po želji završite sa još malo sveže mlevenog crnog bibera i odmah poslužite.
