Priprema


  • 1. Stavite veliki teški tiganj na srednje jaku vatru. Dodajte mlevenu govedinu, začinite solju i crnim biberom i kuvajte 6 do 8 minuta, usitnjavajući je na male, ujednačene komade. Govedina treba da izgubi sirovu boju i dobije tamnosmeđu zapečenu ivicu; sva vlaga treba da ispari, ostavljajući u tiganju koncentrisane zapečene sokove.


  • 2. Dodajte maslac, luk i celer u govedinu. Kuvajte 4 do 5 minuta na srednjoj vatri, uz stalno mešanje, dok luk ne postane staklast, a celer ne omekša bez raspadanja.


  • 3. Dodajte pečurke i kuvajte još 4 minuta. Pečurke treba najpre da puste svoju vlagu, a zatim da počnu da postaju sjajne i blago porumenele. Dodajte beli luk i kuvajte 30 sekundi, samo dok ne zamiriše.


  • 4. Dodajte krompirove njoke i promešajte da se oblože masnoćom i mesnim sokovima. Kuvajte 2 minuta, dopuštajući da njoki dobiju malo boje po ivicama.


  • 5. Sipajte pavlaku za kuvanje i dovedite sadržaj tiganja do blagog krčkanja na srednjoj vatri. Kuvajte 4 do 6 minuta, povremeno mešajući, dok se pavlaka blago ne zgusne i ne obavije njoke i govedinu. Sos treba da bude svilenkast i povezan, ne redak, a njoki treba da budu mekani do sredine.


  • 6. Probajte i prilagodite samo ako je potrebno malim dodatnim prstohvatom soli ili crnog bibera od navedenih začina, zatim sklonite sa vatre. Ostavite tiganj da odstoji 1 minut kako bi se sos smirio u glatku, sjajnu završnicu.
