  • Postupak


  • 1. Stavite basmati pirinač u fino sito i ispirajte pod mlazom hladne vode 30 sekundi, dok voda ne postane gotovo bistra. Dobro ocedite. Time se uklanja višak površinskog skroba i čuva odvojeno, elegantno zrno.

  • 2. Pomešajte pirinač, vodu i so u srednjoj šerpi. Pustite da provri na jakoj vatri, zatim poklopite, smanjite na najnižu temperaturu i kuvajte 12 minuta bez podizanja poklopca. Sklonite sa vatre i ostavite da odstoji, poklopljeno, 8 minuta. Zrna treba da budu mekana, odvojena i suva na površini.

  • 3. Začinite pileća prsa solju, crnim biberom, paprikom i belim lukom u prahu, ravnomerno sa obe strane. Po potrebi ih blago istanjite na jednaku debljinu kako bi se šnicla ravnomerno ispekla.

  • 4. Rasporedite brašno, umućeno jaje i prezle u tri plitke posude. Uvaljajte piletinu u brašno, otresite višak, zatim provucite kroz jaje i na kraju utisnite u prezle dok ne bude potpuno obložena. Korica treba da prijanja u tankom, ravnomernom sloju.

  • 5. Zagrejte biljno ulje u teškom tiganju na srednjoj vatri do 175°C. Pržite piletinu 3 do 4 minuta sa prve strane, zatim 3 minuta sa druge, dok korica ne postane tamnozlatna i unutrašnja temperatura ne dostigne 74°C. Prebacite na poslužavnik obložen papirom i ostavite da odmori 2 minuta. Obloga treba da bude hrskava, suva i jasno čvrsta pri dodiru.

  • 6. Zagrejte grašak u poklopljenoj šerpi sa pirinčem 1 minut na tihoj vatri, zatim ga nežno umešajte u pirinač viljuškom. Grašak treba da ostane svetao i mekan.

  • 7. Isecite piletinu uredno ukoso neposredno pre serviranja.
