  • Postupak


  • 1. Uredno obložite kalup i stavite ga nadohvat ruke. U maloj posudi pomešajte mlečni protein, hidrolizat kolagena, polidekstozu, zaslađivač i so, pa mešajte dok praškasti sastojci ne budu potpuno ujednačeni, bez svetlih tragova i grudvica.


  • 2. Dodajte glicerol i aromu u suvu mešavinu. Špatulom sjedinite dok se ne formira čvrsta, kompaktna pasta. Umešajte seckani kikiriki i kratko izmesite dok masa ne bude ravnomerno prošarana i dok se drži zajedno bez pucanja.


  • 3. Utisnite smesu u kalup u jednom sloju. Čvrsto i ravnomerno je sabijte, obraćajući posebnu pažnju na uglove i ivice. Površina treba da bude ravna, kompaktna i glatka na dodir. Ohladite 10 minuta, dok pločica ne bude dovoljno čvrsta da se izvadi iz kalupa bez deformacije.


  • 4. Izvadite pločicu iz kalupa i stavite je na tacnu obloženu papirom za pečenje. U posudi otpornoj na toplotu, na blagoj temperaturi, otopite zajedno kakao puter i ulje palminog jezgra dok ne postanu tek tečni, zatim umešajte zaslađivač, so i aromu. Na kraju umešajte soy crisp, tako da preliv ostane lagan i ravnomerno raspoređen.


  • 5. Obložite pločicu prelivom u tankom, ravnomernom sloju, koristeći ugaonu špatulu da zagladite površinu. Radite brzo kako bi omotač ostao uredan i sjajan. Ostavite pločicu na hladnoj sobnoj temperaturi 5 do 8 minuta, dok se preliv potpuno ne stegne i površina ne postane suva i hrskava.


  • Serviranje i posluživanje


    Poslužite pločicu celu, postavljenu u sredinu malog tanjira ili u prezentaciji na omotu. Završni izgled treba da bude uredan i kompaktan, sa hrskavom spoljašnjom ljuskom i gustom unutrašnjošću koja blago popušta pod zagrizom. Nota kikirikija treba da bude vodeća, a zatim da je prate kontrolisana slatkoća i suv završetak bogat proteinima.
