  • Metode



  • 1. Haal die kase uit verkoeling en laat dit vir 20 minute by kamertemperatuur staan. Die brie moet effens sag word in die middel, terwyl die bloukaas en verouderde kase gestruktureerd bly en netjies sny.


  • 2. Verhit die suurdeegbrood in ’n broodrooster of oond by 180°C vir 4 tot 6 minute, net totdat die kors bros is en die binnekant soepel bly. Moenie dit diep verkleur nie; die brood moet die kase ondersteun, nie oorheers nie.


  • 3. Sny of porsioneer die halfharde koeimelkkaas, harde koeimelkkaas en gewaste-korskaas in netjiese stukke wat hul vorm op die bord sal behou. Laat die brie heel of sny dit in egalige wiggies. Krummel die bloukaas liggies indien nodig sodat dit met presisie bedien kan word.


  • 4. Skep die sagte botter in ’n klein, netjiese hopie of quenelle langs die brood. Plaas die heuningkoek as een ongeskonde stuk sodat die struktuur sigbaar bly en die wasagtige selle ongestoord is.


  • 5. Giet die cocktail in ’n verkoelde glas en rond af met die lemoenskil. Druk die skil oor die oppervlak om die olies vry te stel, en plaas dit dan netjies in die drankie.


  • 6. Rangskik die kase op die plank of bord in ’n doelbewuste volgorde van sag na sterk. Hou ruimte tussen elke element sodat die oog die samestelling duidelik lees. Voeg die brood, botter en heuningkoek by as ondersteunende elemente eerder as versiering.


  • Uitplasing en bediening



    Bedien die kase teen koel kamertemperatuur, met die brood nog warm. Bied die cocktail apart aan, naby genoeg om deel van die bediening te voel, maar nie so naby dat dit die bord oorvol maak nie. Die finale samestelling moet gebalanseerd, saamgestel en stilweg luuks voel.
