Hierdie kerrie berus op terughouding: sagte ui, gemmer, knoffel en kerriepoeier gedra deur klappermelk, en dan afgewerk met hoender wat sag en volledig gegeur bly. Die sous moet glad, liggies verdik en geurig wees eerder as swaar. Die balans daarvan hang af van skoon hitte, afgemete sout en die stille rykheid van die klapper.

  • Hoender, 180 g, in 3 cm-stukke gesny

  • Klappermelk, 120 g

  • Ui, 35 g, fyn gesny

  • Groenrissie, 5 g, fyn gesny

  • Knoffel, 6 g, fyn gekap

  • Gemmer, 8 g, fyn gekap

  • Plantaardige olie, 10 g

  • Kerriepoeier, 4 g

  • Sout, 2 g


  • Metode


  • 1. Plaas die kastrol oor medium hitte en voeg die plantaardige olie by. Verhit vir 30 sekondes, voeg dan die ui en 'n knippie van die sout by. Kook vir 4 tot 5 minute, roer gereeld, totdat die ui sag, deurskynend en net begin versoet sonder om te verbruin.

  • 2. Voeg die knoffel, gemmer en groenrissie by. Kook vir 1 minuut, roer aanhoudend, totdat dit geurig is en die rou skerpte van die aromatiese bestanddele verdwyn het.

  • 3. Voeg die kerriepoeier by en kook vir 30 sekondes, roer voortdurend, totdat die spesery geurig word en effens donkerder van kleur is.

  • 4. Voeg die hoender en die oorblywende sout by. Roer om die stukke eweredig met die gekruide basis te bedek. Kook vir 3 tot 4 minute, draai die hoender sodat die buitekant sy rou pienk kleur verloor.

  • 5. Giet die klappermelk in en bring tot 'n sagte prut oor medium-lae hitte. Kook sonder deksel vir 10 tot 12 minute, roer af en toe, totdat die hoender heeltemal gaar is en die sous gereduseer het tot 'n liggies bedekkende konsekwentheid.

  • 6. Verlaag die hitte na laag en prut nog 2 minute. Die sous moet glansend en samehangend wees en aan die hoender kleef sonder om te skei. Proe vir sout en pas slegs aan indien nodig binne die afgemete balans.

  • 7. Verwyder van die hitte en laat 2 minute staan voor opdiening. Dit laat die sous set en gee die hoender 'n skoner afwerking.
