  • Lemmetjiesap — 20 g

  • Koljander, blare en sagte stingels, gekap — 12 g


  • Metode


  • 1. Meng die witvis, lemmetjiesap en sout in ’n bak. Draai versigtig om dit te bedek en laat vir 10 minute rus. Die vis moet effens begin verstewig aan die rande terwyl dit steeds glansend en heel bly.


  • 2. Plaas ’n 24 cm-soteerpan oor medium hitte en voeg die olyfolie by. Voeg die ui en knoffel by en kook vir 4 minute, terwyl jy aanhoudend roer, totdat die ui deurskynend is en die knoffel geurig maar nie verkleur nie.


  • 3. Voeg die soetrissie en tamatie by. Kook vir 5 minute, roer af en toe, totdat die tamatie begin afbreek en die groente ’n liggies gesousde basis vorm.


  • 4. Giet die klappermelk in en voeg die oorblywende sout by. Bring tot ’n sagte prut oor medium-lae hitte en kook vir 3 minute. Die vloeistof moet eenvormig en liggies verdik lyk, nooit hard kook nie.


  • 5. Rangskik die vis en sy lemmetjiesappe in ’n enkele laag in die pan. Bedek en kook vir 4 tot 5 minute, afhangend van die dikte, totdat die vis ondeursigtig word en maklik in die middel vlok, maar steeds ’n klam, syagtige tekstuur behou.


  • 6. Verwyder van die hitte en vou die koljander in. Laat die bredie vir 1 minuut staan sodat die kruie die sous parfumeer sonder om hul varsheid te verloor.


  • Opskep en bediening


    Skep die bredie in warm vlak bakkies, en verdeel die vis en sous eweredig. Die finale bord moet wys hoe die vis in ’n lewendige, koraalkleurige sous lê, met die koljander wat oor die oppervlak versprei is eerder as daaronder begrawe. Bedien onmiddellik terwyl die sous warm is en die vis sag bly.
