Natillas de chocolate

Unas natillas de chocolate ricas y cremosas, de textura suave y para comer con cuchara, hechas con leche, nata, yema de huevo, cacao, azúcar y vainilla. Son similares a una clásica crème anglaise o a una base de pot de crème, y se sirven frías o ligeramente templadas.

Ingredientes


  • Leche 70 g

  • Nata 45 g

  • Azúcar 20 g

  • Cacao en polvo 10 g

  • Yema de huevo 20 g

  • Vainilla 15 g


  • Total: 180 g

    Instrucciones


  • 1. En un cazo pequeño, bate la leche, la nata, el azúcar, el cacao y la vainilla hasta obtener una mezcla homogénea.

  • 2. Calienta a fuego medio hasta que empiece a humear, pero sin que llegue a hervir.

  • 3. En un bol, bate ligeramente la yema de huevo.

  • 4. Vierte lentamente la mezcla caliente de cacao sobre la yema, batiendo constantemente para atemperarla.

  • 5. Devuelve la mezcla al cazo y cocina a fuego bajo, removiendo constantemente, hasta que espese lo suficiente como para cubrir el dorso de una cuchara.

  • 6. Retira del fuego inmediatamente y cuela si lo deseas para obtener una textura más fina.

  • 7. Enfría antes de servir, o sírvela templada como salsa de natillas.
