Postupak


  • 1. Zakuhajte srednje velik lonac posoljene vode. Dodajte brokulu i kuhajte 2 minute, samo dok ne postane žarko zelena i jedva omekša. Odmah je izvadite i dobro ocijedite. Cvjetići trebaju ostati čvrsti i žive boje.


  • 2. Vratite vodu do vrenja i kuhajte njoke 2 do 3 minute, dok ne isplivaju na površinu i ne budu mekani, ali još uvijek elastični. Temeljito ih ocijedite i ostavite sa strane.


  • 3. Stavite veliku tavu za pirjanje na srednje jaku vatru. Dodajte maslinovo ulje i maslac. Kad se maslac zapjeni, dodajte luk i kuhajte 4 do 5 minuta, često miješajući, dok ne postane staklast i lagano zlatan po rubovima.


  • 4. Dodajte češnjak i kuhajte 30 sekundi, samo dok ne zamiriše. Dodajte mljevenu govedinu te začinite solju i crnim paprom. Usitnite meso i kuhajte 6 do 8 minuta, dok se dobro ne zapeče i u tavi ostane vrlo malo vlage. Govedina treba biti duboko zapečena i puna okusa, ne siva.


  • 5. Dodajte brokulu i kuhajte 1 minutu, miješajući kako bi se obložila masnoćom i sokovima od govedine.


  • 6. Ulijte vrhnje za kuhanje i lagano zakuhajte. Kuhajte 2 do 3 minute, miješajući, dok se umak lagano ne zgusne i ne počne oblagati stražnju stranu žlice.


  • 7. Dodajte njoke i parmezan. Pažljivo promiješajte 1 do 2 minute na laganoj vatri dok se sir ne otopi, a umak ne postane sjajan i ravnomjerno prione uz svaki komad. Završna tekstura treba biti kremasta, ne rijetka, a njoki trebaju ostati cijeli.


  • Serviranje i posluživanje


    Rasporedite njoke u zagrijane plitke zdjele, pazeći na ravnomjernu raspodjelu govedine i brokule. Žlicom prelijte umak odozgo tako da se jelo složi u glatku, povezanu hrpicu s čistim sjajem. Po želji završite s još malo svježe mljevenog crnog papra i odmah poslužite.
