    Daging babi dan marinasi



  • 1000 g daging babi

  • 25 g bawang putih, diparut halus

  • 45 g kecap asin

  • 30 g gula merah

  • 35 g pasta cabai

  • 20 g minyak sayur

  • 3 g lada hitam

  • 4 g paprika bubuk


  • Cara membuat



  • 1. Campurkan bawang putih, kecap asin, gula merah, pasta cabai, minyak sayur, lada hitam, dan paprika bubuk dalam mangkuk adonan. Aduk hingga gula larut dan campuran menjadi halus serta menyatu.


  • 2. Masukkan daging babi lalu balik hingga seluruh permukaannya terlapisi marinasi, sambil menekan campuran ke permukaan daging. Tutup dan marinasi selama 30 menit pada suhu ruang, balik sekali di pertengahan waktu. Daging babi harus terlapisi merata dan tampak berwarna oleh bumbu.


  • 3. Panaskan oven hingga 190°C. Letakkan daging babi di atas rak kawat di atas loyang panggang, biarkan kelebihan marinasi menetes ke bawah. Sisihkan sisa marinasi yang masih ada di mangkuk.


  • 4. Panggang selama 55 hingga 65 menit, olesi sekali atau dua kali dengan sisa marinasi pada paruh pertama waktu memasak. Bagian luar harus menggelap menjadi warna mahoni tua sambil tetap mengilap.


  • 5. Periksa bagian tengah dengan termometer baca instan. Angkat daging babi saat suhu internal mencapai 68°C. Diamkan selama 15 menit; suhunya akan naik dan serat daging akan mengendur.


  • 6. Iris melawan arah serat menjadi potongan yang rata. Daging harus berair, agak padat, dan berbumbu merata pada lapisan luarnya, dengan aroma bawang putih-cabai yang bersih.

    Susun irisan daging babi dengan tumpang tindih yang rapi di atas piring hangat. Sendokkan sedikit cairan dari loyang di atas daging dan jaga tampilannya tetap bersih, sehingga permukaan berlapis glasir tetap terlihat. Sajikan dengan glasir terkonsentrasi pada daging babi, bukan menggenang di bawahnya.
