カレー風味の野菜ビーフン スープ

じゃがいも、にんじん、玉ねぎ、ビーフンを、シンプルなカレー風味のスープで煮込んだ、軽やかでほっとするスープです。カレーで味付けした野菜ヌードルスープに似ています。

Ingredients
  • じゃがいも 200 g

  • にんじん 120 g

  • 玉ねぎ 100 g

  • ビーフン 60 g

  • 野菜ブロス 250 ml

  • 植物油 20 ml

  • にんにく 10 g

  • しょうが 10 g

  • カレー粉 10 g

  • 塩 5 g

  • 黒こしょう 2 g

    Instructions
  • 1. 鍋に植物油を入れ、中火で熱します。

  • 2. 玉ねぎ、にんにく、しょうがを加えます。香りが立つまで2〜3分炒めます。

  • 3. カレー粉を加えて混ぜ、30秒ほど加熱します。

  • 4. じゃがいもとにんじんを加え、野菜ブロスを注ぎます。

  • 5. 沸騰したら弱火にし、野菜がやわらかくなるまで12〜15分煮ます。

  • 6. ビーフンを加え、ちょうどやわらかくなるまで2〜4分煮ます。

  • 7. 塩と黒こしょうで味を調え、熱いうちに提供します。
