Curried grønnsakssuppe med vermicelli

En lett og trøstende suppe laget med poteter, gulrøtter, løk og vermicelli-nudler i en enkel buljong krydret med karri. Den ligner en grønnsaksnudelsuppe med karrikrydder.

Ingredienser
  • Potet, 200 g

  • Gulrot, 120 g

  • Løk, 100 g

  • Vermicelli-nudler, 60 g

  • Grønnsaksbuljong, 250 ml

  • Vegetabilsk olje, 20 ml

  • Hvitløk, 10 g

  • Ingefær, 10 g

  • Karripulver, 10 g

  • Salt, 5 g

  • Svart pepper, 2 g


  • Totalvekt: 780 g

    Fremgangsmåte
  • 1. Varm opp den vegetabilske oljen i en gryte over middels varme.

  • 2. Tilsett løk, hvitløk og ingefær. Stek i 2 til 3 minutter til det dufter godt.

  • 3. Rør inn karripulveret og stek i 30 sekunder.

  • 4. Tilsett potet og gulrot, og hell deretter i grønnsaksbuljongen.

  • 5. Kok opp, senk deretter varmen og la det småkoke i 12 til 15 minutter til grønnsakene er møre.

  • 6. Tilsett vermicelli-nudlene og kok i 2 til 4 minutter til de akkurat er myke.

  • 7. Smak til med salt og svart pepper. Server varm.
