  • Postopek



  • 1. Po potrebi obložite model za 110 g ploščico z ustrezno prirezaným trakom papirja za peko. Postavite ga na hladno, da se bo nadev enakomerno strdil.


  • 2. V majhni skledi zmešajte mlečne beljakovine, hidrolizirani kolagen, sladilo, mlete arašide, polnomastno mleko v prahu, izolat sojinih beljakovin, polidekstrozo, pšenično moko, sol, naravno aromo in emulgator. Temeljito premešajte z lopatico, dokler se praškaste sestavine enakomerno ne porazdelijo in ne ostanejo svetlejše sledi.


  • 3. V majhni kozici na najnižji temperaturi skupaj stopite kakavovo maslo, olje palmovih jedrc, kakavovo maso in sončnično olje 2 do 3 minute ter ves čas mešajte. Zmes mora postati gladka, sijoča in popolnoma tekoča, brez vidnih trdnih delcev.


  • 4. Stopljeno maščobno zmes prelijte čez suhe sestavine in takoj obdelajte z lopatico, dokler ne nastane gosta, enotna pasta. Na koncu nežno vmešajte hrustljavi riž, da ostane cel in da zmes ohrani izrazito hrustljavost.


  • 5. Zmes trdno vtisnite v pripravljen model v enakomerni plasti, pri tem pa s hrbtno stranjo lopatice odstranite morebitne praznine. Površina mora biti ravna, kompaktna in brez razpok.
