Ova pica se zasniva na uzdržanosti: podatno testo od pšeničnog brašna, čista baza od paradajza i piletina pripremljena do mekoće pre nego što toplota rerne dovrši posao. Mozzarella treba da se istopi u ujednačen sloj, a ne u težak pokrivač, dok svež paradajz i origano održavaju ukus svetlim i skladnim.   • 150 g pšeničnog brašna

  • 90 g vode

  • 3 g kvasca

  • 3 g šećera

  • Postupak



  • 1. Pomešajte pšenično brašno, kvasac, šećer i so u posudi za mešanje. Dodajte vodu i maslinovo ulje, pa mešajte dok se ne formira grubo testo. Mesite 8 minuta, dok ne postane glatko, elastično i više se ne lepi. Pokrijte i ostavite da odmara 45 minuta, dok vidno ne naraste i ne postane podatno.


  • 2. Dok testo odmara, začinite pileća prsa solju. Zagrejte tiganj na srednjoj vatri, dodajte maslinovo ulje i pecite piletinu 4 do 5 minuta sa svake strane. Površina treba blago da porumeni, a sredina da bude potpuno neprozirna. Ostavite da odmori 5 minuta, zatim tanko isecite.


  • 3. Zagrejte rernu na 250°C. Ako koristite pleh, stavite i njega u rernu da se prethodno zagreje; podloga mora da dođe u kontakt sa vrelom površinom kako bi se ispekla kako treba.


  • 4. Razvucite testo u krug prečnika oko 25 cm, tako da sredina bude malo tanja od ivice. Prebacite ga na pleh. Rasporedite paradajz sos u tankom, ravnomernom sloju, ostavljajući uz ivicu uzak prazan rub.


  • 5. Ravnomerno rasporedite isečenu piletinu preko sosa. Dodajte mozzarellu u uravnoteženom sloju, zatim odozgo poređajte kriške paradajza. Završite origanom.


  • 6. Pecite 10 do 12 minuta, dok korica na ivicama dobro ne porumeni, podloga se ne ispeče do kraja, a mozzarella se potpuno ne istopi uz blagu zlatnu boju ponegde. Paradajz treba da omekša, ali da se ne raspadne potpuno.

    Prebacite picu na dasku ili veliki tanjir i ostavite je da stoji 1 minut pre sečenja. Poslužite u urednim trouglovima, sa ravnomerno raspoređenom piletinom i sjajnom, ali ne mokrom površinom. Gotova pica treba da bude hrskava na ivici, nežna u sredini i uravnotežena između kiselosti paradajza, punoće mlečnog ukusa i slane dubine piletine.
