  • Postupak



  • 1. Stavite kalup na stabilan poslužavnik. U maloj posudi sjedinite mlečne proteine, hidrolizovani kolagen, polidekstozu, zaslađivač i so. Temeljno umutite žicom dok smeša ne postane potpuno ujednačena i bez vidljivih pruga.


  • 2. Stavite kakao-maslac i ulje od palminih koštica u malu šerpu na veoma tihu vatru. Zagrevajte samo dok se potpuno ne otope i ne postanu bistri, 2 do 3 minuta. Sklonite sa vatre i umešajte glicerol i emulgator dok smeša ne postane glatka i ujednačena.


  • 3. Dodajte otopljenu masnu smešu suvim sastojcima u dva navrata, mešajući nakon svakog dodavanja silikonskom špatulom. Masa treba da postane gusta, kompaktna i blago sjajna. Umešajte puter od kikirikija i seckani kikiriki i mešajte samo dok se ravnomerno ne rasporede.


  • 4. Čvrsto utisnite smešu u kalup u jednom neprekinutom sloju, sabijajući je poleđinom špatule tako da nema praznina. Površina treba da bude ravna i zategnuta.


  • 5. Ohladite 10 do 12 minuta, samo dok se ne stegne dovoljno da se može uredno izvaditi iz kalupa. Pločica treba da bude čvrsta na dodir, sa gustom unutrašnjošću koja može da se seče i bez lepljivosti na površini.


  • Serviranje i prezentacija



    Izvadite pločicu iz kalupa i poslužite je celu, postavljenu po sredini jednostavnog tanjira ili precizno upakovanu za posluživanje. Završni izgled treba da bude čist i mat, a komadići kikirikija vidljivi samo kao suptilan nagoveštaj ukusa.
