  • Priprema



  • 1. Isperite basmati pirinač u nekoliko voda dok voda ne postane gotovo bistra. Dobro ocedite. U šerpi pomešajte pirinač, vodu i so, dovedite do ključanja na jakoj vatri, zatim poklopite i smanjite na najslabiju vatru. Kuvajte 12 minuta bez podizanja poklopca. Sklonite sa vatre i ostavite da odstoji, poklopljeno, 10 minuta. Zrna treba da budu odvojena, mekana i suva na površini.


  • 2. Dok se pirinač kuva, stavite mlevenu govedinu u posudu sa 10 g biljnog ulja, solju, crnim biberom, kimom, korijanderom, mlevenim crvenim čilijem, kurkumom, belim lukom i đumbirom. Mešajte samo dok se ravnomerno ne sjedini; nemojte preterano obrađivati smesu. Podelite na 4 jednake pljeskavice i pritisnite ih na ujednačenu debljinu kako bi se ravnomerno ispekle.


  • 3. Zagrejte tiganj na srednje jakoj vatri. Dodajte pljeskavice i pecite 3 do 4 minuta sa prve strane, dok dobro ne porumene i ivice se ne učvrste. Okrenite i pecite 3 minuta sa druge strane. Po potrebi smanjite vatru i pecite još 1 minut, da dobiju čvrstu spoljašnjost i sočnu sredinu bez vidljivog sirovog mesa.


  • 4. U maloj posudi pomešajte krastavac sa limunovim sokom i 4 g biljnog ulja. Lagano promešajte tako da krastavac dobije blag sjaj, ali da ostane hrskav.


  • 5. Rastresite pirinač viljuškom i začinite ga sokovima iz tiganja ako ih je ostalo, prelivajući ih preko pirinča samo ako su čisti i dobro zaprženi. Pirinač treba da ostane rastresit i mirisan, ne mokar.


  • Serviranje


    Stavite pirinač blago van centra na zagrejane tanjire. Pored njega rasporedite goveđe pljeskavice, ne preko njega, kako bi njihova zapečena površina ostala vidljiva. Poređajte krastavac sa strane i završite laganim prelivanjem limunovog ulja preko tanjira. Poslužite odmah, dok su pljeskavice vruće, a krastavac i dalje hrskav.
