  • Postupak


  • 1. Pomešajte pšenično brašno, kvasac i so u posudi za mešanje. Dodajte mlaku vodu i mešajte dok se ne formira grubo testo bez ostataka suvog brašna, oko 2 minuta.

  • 2. Mesite testo na čistoj površini 6 do 8 minuta, dok ne postane glatko, elastično i više se ne lepi. Testo treba da bude podatno i da zadržava oblik bez cepanja.

  • 3. Stavite testo u blago pokrivenu posudu i ostavite da narasta na sobnoj temperaturi 90 minuta, ili dok ne udvostruči zapreminu i ne postane vazdušasto na dodir.

  • 4. Zagrejte rernu sa kamenom za picu ili čeličnom pločom za pečenje već unutra na 290°C najmanje 30 minuta. Površina mora biti potpuno zasićena toplotom.

  • 5. U maloj posudi pomešajte paradajz sos sa narendanim belim lukom i origanom. Promešajte samo koliko je potrebno da se ravnomerno rasporedi.

  • 6. Razvucite testo u krug prečnika oko 28 cm, tako da ivica bude malo deblja od sredine. Prebacite ga na lopatu za picu blago posutu brašnom.

  • 7. Rasporedite mešavinu paradajza u tankom, ravnomernom sloju preko testa, ostavljajući čist rub od 1.5 cm. Rasporedite mocarelu, zatim pečurke i kriške paradajza. Završite maslinovim uljem.

  • 8. Spustite picu na vruć kamen i pecite 7 do 8 minuta, dok korica ne dobije tamnozlatnu boju po ivicama, dno ne postane hrskavo, a sir se potpuno ne istopi uz blago stvaranje mehurića.

  • 9. Izvadite picu iz rerne i ostavite da odstoji 1 minut. Pospite bosiljak po površini neposredno pre serviranja.

    Prebacite picu na dasku ili zagrejan poslužavnik i isecite na 4 do 6 jednakih parčadi. Korica treba da ostane hrskava po obodu, nežna u sredini i blago prošarana mehurićima ispod nadeva. Poslužite odmah, dok je sir još uvek tečan, a bosiljak mirisan.
