Large restaurant-style bacon cheeseburger with a beef patty, cheddar, bacon, vegetables, and a side of loaded fries topped with cheese sauce, bacon, and herbs. High in calories, fat, sodium, and protein.
Bacon Cheeseburger with Loaded Cheese Fries
Headnote
This is a composed American classic built on contrast: a properly seared beef patty, crisp bacon, cool lettuce, and the sharp sweetness of tomato and onion, all held in a toasted sesame bun. The fries are not an afterthought but a second center of gravity, cloaked in cheese sauce and finished with bacon and herbs for salt, richness, and freshness. The result should read as generous, direct, and exact.

Ingredients
Burger
1 sesame bun, 90 g
beef patty, 170 g
cheddar cheese, 30 g
bacon, 30 g
mayonnaise, 20 g
tomato, 40 g, sliced
red onion, 20 g, thinly sliced
lettuce, 20 g
Loaded cheese fries
french fry potato, 190 g, cut into fries
cheese sauce, 70 g
bacon, 20 g, cooked and finely chopped
green onion, 10 g, thinly sliced
parsley, 5 g, finely chopped
Method
1. Heat the oven to 220°C. Spread the french fry potato on a baking tray in a single layer and cook for 18 to 22 minutes, turning once halfway through, until deeply golden, crisp at the edges, and tender within.
2. While the fries cook, set a heavy skillet or griddle over medium-high heat. Cook the bacon for 4 to 6 minutes, turning as needed, until crisp and well rendered. Drain briefly on paper towels, then reserve. Keep 20 g for the burger and 20 g for the fries.
3. Season the beef patty lightly if needed from the ingredient list as supplied, then sear it in the hot skillet for 3 to 4 minutes on the first side without moving it. Turn once, place the cheddar cheese over the patty, and cook for 2 to 3 minutes more until the cheese begins to melt and the patty is cooked through with a juicy center and a browned exterior.
4. Split the sesame bun and toast the cut sides in the skillet for 45 to 60 seconds until lightly crisp and warm. The crumb should remain supple, not dry.
5. Warm the cheese sauce in a small saucepan over low heat for 2 to 3 minutes, stirring until smooth and fully fluid. It should coat the fries without clumping or breaking.
6. Assemble the burger: spread the mayonnaise on the bottom bun, add the lettuce, then the tomato and red onion, then the cheeseburger patty, and finish with the top bun. Press only lightly so the structure remains clean.
7. Finish the fries: place the cooked fries in a warm serving bowl, spoon over the cheese sauce, scatter with the chopped bacon, green onion, and parsley, and toss very lightly so the fries remain visible and distinct.
Plating and serving
Set the burger slightly off-center on a warm plate and arrange the loaded fries beside it in a separate mound. The burger should hold its height, while the fries should look glossy, abundant, and sharply finished. Serve immediately while the bun is warm, the cheese is fluid, and the fries remain crisp at the edges.
Professional notes
Do not over-toast the bun; it must support the filling without becoming brittle. Keep the fries dry before saucing, or they will collapse under the cheese. The bacon should be crisp enough to provide bite, but not so dark that it turns bitter.
