Ensalada energética de pollo y boniato

Una ensalada compuesta rica en proteínas con pechuga de pollo sazonada, boniato asado, queso cottage, pepino y hojas verdes. Se parece a un bowl simplificado de ensalada de pollo y boniato con un aliño ligero de aceite de oliva y hierbas.

Ingredientes


Rendimiento total: 500 g

  • 160 g de pechuga de pollo

  • 120 g de boniato

  • 80 g de queso cottage

  • 60 g de pepino

  • 50 g de hojas verdes

  • 15 g de aceite de oliva

  • 5 g de sal

  • 5 g de pimienta negra

  • 5 g de hierbas secas


  • Instrucciones paso a paso


  • 1. Precalienta el horno a 200°C.

  • 2. Pela y corta el boniato en cubos del tamaño de un bocado. Mézclalo con la mitad del aceite de oliva, un poco de sal, pimienta negra y algunas hierbas secas.

  • 3. Asa el boniato durante 20–25 minutos hasta que esté tierno y ligeramente dorado.

  • 4. Sazona la pechuga de pollo con sal, pimienta negra y hierbas secas.

  • 5. Calienta una sartén a fuego medio con el aceite de oliva restante y cocina el pollo durante 5–6 minutos por lado, o hasta que esté completamente cocido. Déjalo reposar 5 minutos y luego córtalo en rodajas.

  • 6. Corta el pepino en rodajas y prepara las hojas verdes.

  • 7. Monta el bowl con las hojas verdes, el boniato asado, el pepino, el pollo en rodajas y el queso cottage.

  • 8. Termina con el sazonado restante al gusto y sirve templado o frío.
