  • Tepung terigu 90 g

  • Babi panggang 45 g, cincang halus

  • Kecap asin 4 g

  • Saus tiram 6 g

  • Metode



  • 1. Campurkan tepung terigu, gula, ragi, dan baking powder dalam mangkuk adonan. Tambahkan lard lalu gosokkan ke dalam bahan-bahan kering hingga tersebar merata dan bertekstur sedikit berpasir.


  • 2. Tambahkan air dan aduk hingga terbentuk adonan kasar. Uleni selama 8 menit, sampai halus, elastis, dan tidak lagi lengket. Tutup dan diamkan selama 45 menit, atau sampai adonan tampak bertambah volumenya secara nyata dan terasa ringan saat disentuh.


  • 3. Sementara adonan didiamkan, siapkan isian. Masukkan babi panggang, kecap asin, saus tiram, gula, tepung maizena, air, dan minyak wijen ke dalam panci kecil. Masak di atas api sedang selama 3 hingga 4 menit sambil terus diaduk, sampai campuran mengental menjadi pasta mengilap yang menyatu rapi. Pindahkan ke piring dan dinginkan sepenuhnya.


  • 4. Bagi adonan menjadi 3 bagian sama besar. Bulatkan tiap bagian hingga halus, lalu pipihkan dan gilas menjadi bulatan berdiameter sekitar 10 cm, dengan bagian tengah sedikit lebih tebal daripada tepinya.


  • 5. Bagi isian yang sudah dingin menjadi 3 porsi sama besar. Letakkan satu porsi di tengah tiap bulatan, lalu kumpulkan adonan mengelilingi isian dan cubit rapat untuk menutupnya. Balikkan tiap bakpao dengan sisi sambungan di bawah lalu diamkan selama 10 menit dengan penutup ringan.


  • 6. Potong 3 lembar kertas roti berbentuk persegi lalu letakkan bakpao di atasnya dengan jarak di antara masing-masing. Kukus di atas air yang mendidih aktif selama 12 menit dengan api sedang-besar. Biarkan tutup tetap tertutup sepanjang proses. Setelah matang, bakpao harus mengembang, pucat, dan kenyal, dengan permukaan halus dan tanpa bercak basah.


  • 7. Angkat kukusan dari api dan biarkan bakpao tetap di dalam, tertutup, selama 2 menit sebelum diangkat keluar. Ini mencegah bakpao kempis mendadak dan menjaga remah tetap lembut.


  • Penyajian


    Sajikan bakpao selagi hangat, ditata dengan jarak di antaranya agar bagian atasnya yang membulat tetap utuh. Bagian luar harus putih dan lembut, sambungan tersembunyi di bawah, dan isiannya harus tampil sebagai bagian tengah yang mengilap serta sedikit mengalah saat gigitan pertama.

    Isian harus benar-benar dingin sebelum dibungkus, jika tidak, isian akan melemahkan adonan. Jaga bagian tengah adonan sedikit lebih tebal untuk mencegah pecah saat dikukus. Kukus dengan didihan yang stabil, jangan dengan didihan kecil, agar bakpao mengembang dengan rapi dan tetap lembut.
