  • Postopek


  • 1. V srednje veliki kozici zavrite vodo do močnega vrenja. Dodajte steklene rezance in jih kuhajte 3 do 4 minute, le toliko, da postanejo prožni in prosojni, v sredici pa ostane rahel ugriz. Takoj jih odcedite, na hitro sperite pod hladno vodo in pustite dobro odcejene.


  • 2. Piščanca in kozice začinite s soljo in črnim poprom. Kose hranite ločeno, da se vsak skuha enakomerno in ohrani svojo teksturo.


  • 3. Vok ali veliko ponev za praženje segrejte na visoki temperaturi, da se dobro segreje, nato dodajte rastlinsko olje. Dodajte česen in mešajte 10 do 15 sekund, le toliko, da zadiši; ne pustite, da močno porjavi.


  • 4. Dodajte piščanca in ga med mešanjem pražite 2 minuti, pri tem pa kose nenehno premikajte, dokler zunanjost ne postane neprosojna in rahlo čvrsta. Dodajte kozice in nadaljujte še 1 minuto, dokler kozice ob robovih ne začnejo rožneti.


  • 5. Dodajte zelje in kuhajte 1 do 2 minuti, ob stalnem premetavanju, dokler se rahlo ne zmehča, vendar še vedno ohrani nežno hrustljavost. Ponev mora ostati živahna in suha, ne soparna.


  • 6. Dodajte omako iz zelenega karija in sojino omako. Premešajte, da se sestavine enakomerno obdajo, nato dodajte odcejene steklene rezance. Premetavajte 30 do 45 sekund, dokler rezanci niso sijoči, enakomerno začinjeni in povsem pregreti.


  • 7. Dodajte mlado čebulo in še enkrat premešajte 10 sekund. Takoj odstavite z ognja; mlada čebula mora ostati svetla in aromatična, ne pa ovenela in mehka.


  • Serviranje


    Rezance lepo naložite v plitvo skledo ali na topel krožnik, pri čemer kozice in piščanca povlecite na površino, namesto da ju zakopljete pod rezance. Končana jed mora biti videti rahlo glazirana, zelje in mlada čebula pa morata biti enakomerno razporejena, rezanci pa ločeni, ne sprijeti.
