  • Postupak



  • 1. Po potrebi obložite kalup za pločicu od 110 g odgovarajućom trakom papira za pečenje. Ostavite ga sa strane na hladnom mestu kako bi se fil ravnomerno stegao.


  • 2. U maloj činiji pomešajte mlečne proteine, hidrolizovani kolagen, zaslađivač, mleveni kikiriki, punomasno mleko u prahu, izolat sojinog proteina, polidekstozu, pšenično brašno, so, prirodnu aromu i emulgator. Temeljno mešajte špatulom dok se praškasti sastojci ravnomerno ne rasporede i dok ne nestanu svetlije pruge.


  • 3. U maloj šerpi na najnižoj temperaturi otopite zajedno kakao puter, ulje palminih koštica, kakao masu i suncokretovo ulje tokom 2 do 3 minuta, neprestano mešajući. Smesa treba da postane glatka, sjajna i potpuno tečna, bez vidljivih čvrstih delova.


  • 4. Prelijte otopljenu masnu smesu preko suvih sastojaka i odmah radite špatulom dok se ne formira gusta, ujednačena pasta. Na kraju umešajte ekspandirani pirinač kako bi ostao ceo i kako bi smesa zadržala izraženu hrskavost.


  • 5. Čvrsto utisnite smesu u pripremljeni kalup u ravnomernom sloju, koristeći poleđinu špatule da uklonite praznine. Površina treba da bude ravna, kompaktna i bez pukotina.


  • 6. Hladite 15 do 20 minuta, dok pločica ne postane čvrsta na dodir i dok se ne odvaja uredno od kalupa. Završna tekstura treba da omogućava sečenje bez mrvljenja, ali i dalje da popusti pod čistim zagrizom.
