  • 180 g pilećih grudi, očišćenih i isečenih na komade od 20 g

  • 80 g pečuraka, isečenih na listiće

  • 40 g crnog luka, sitno iseckanog na kockice

  • 40 g paprike, sitno iseckane na kockice

  • 10 g belog luka, vrlo sitno iseckanog

  • 20 g putera

  • 15 g biljnog ulja

  • 80 g pavlake

  • 2 g crnog bibera


  • Postupak


  • 1. Isperite basmati pirinač pod hladnom vodom dok voda ne postane gotovo bistra. Dobro ocedite. Pomešajte pirinač i vodu u šerpi, dovedite do ključanja na srednje jakoj vatri, zatim poklopite, smanjite na najnižu temperaturu i kuvajte 12 minuta. Sklonite sa vatre i ostavite da odmori, poklopljeno, 10 minuta. Zrna treba da budu odvojena, mekana i suva na površini.


  • 2. Začinite piletinu sa 1 g crnog bibera. Zagrejte biljno ulje u tiganju za sotiranje na srednje jakoj vatri. Dodajte piletinu u jednom sloju i pecite 3 minuta bez pomeranja, zatim okrenite i pecite još 2 minuta, dok blago ne porumeni i ne postane tek neprozirna po ivicama. Prebacite na tanjir.


  • 3. U isti tiganj dodajte puter. Kada zapeni, dodajte crni luk i papriku. Kuvajte 4 minuta na srednjoj vatri, uz redovno mešanje, dok ne omekšaju i ne postanu prozirni po ivicama. Dodajte pečurke i kuvajte još 5 minuta, dopuštajući da vlaga ispari i da pečurke dobiju duboku zlatnu boju.


  • 4. Dodajte beli luk i kuvajte 30 sekundi, samo dok ne zamiriše. Vratite piletinu i sav sok koji se skupio na tanjiru u tiganj. Dodajte pavlaku i preostalih 1 g crnog bibera. Lagano krčkajte 3 do 4 minuta, mešajući jednom ili dvaput, dok sos blago ne obloži kašiku, a piletina ne bude potpuno skuvana, bez ružičastih delova, čvrste ali sočne teksture.


  • 5. Rastresite pirinač viljuškom. Podelite ga na zagrejane tanjire ili plitke činije. Kašikom rasporedite sos sa piletinom i pečurkama preko i pored pirinča, tako da zrna ostanu vidljiva, a sos zadržan na svom mestu.
