Char siu bao ialah kajian tentang kontras: roti bun selembut awan yang membungkus inti daging babi berkilat, masin-manis. Kejayaannya bergantung pada disiplin dalam kedua-dua doh dan inti, supaya serbuk roti kekal lembut dan bahagian tengah kekal lembap, tidak pernah basah.   • Tepung gandum 90 g

  • Daging babi barbeku 45 g, dipotong dadu halus

  • Kicap soya 4 g

  • Sos tiram 6 g

  • Kaedah



  • 1. Satukan tepung gandum, gula, yis, dan serbuk penaik dalam mangkuk adunan. Masukkan lemak babi dan ramas ke dalam bahan kering sehingga tersebar sekata dan bertekstur sedikit berpasir.


  • 2. Masukkan air dan gaul sehingga terbentuk doh kasar. Uli selama 8 minit, sehingga licin, anjal, dan tidak lagi melekit. Tutup dan rehatkan selama 45 minit, atau sehingga doh meningkat dengan ketara dalam isipadu dan terasa ringan apabila disentuh.


  • 3. Sementara doh berehat, sediakan inti. Masukkan daging babi barbeku, kicap soya, sos tiram, gula, tepung jagung, air, dan minyak bijan ke dalam periuk kecil. Masak di atas api sederhana selama 3 hingga 4 minit, kacau sentiasa, sehingga campuran memekat menjadi pes berkilat yang menyatu dengan kemas. Pindahkan ke pinggan dan sejukkan sepenuhnya.


  • 4. Bahagikan doh kepada 3 bahagian sama besar. Bulatkan setiap bahagian menjadi bebola licin, kemudian leperkan dan canai menjadi bulatan kira-kira 10 cm lebar, dengan bahagian tengah sedikit lebih tebal daripada tepi.


  • 5. Bahagikan inti yang telah sejuk kepada 3 bahagian sama besar. Letakkan satu bahagian di tengah setiap bulatan, kemudian himpunkan doh mengelilingi inti dan cubit rapat untuk menutup. Terbalikkan setiap bun dengan bahagian sambungan di bawah dan rehatkan selama 10 minit di bawah penutup ringan.


  • 6. Potong 3 keping kertas parchment berbentuk segi empat dan letakkan bun di atasnya dengan jarak antara satu sama lain. Kukus di atas air yang mendidih aktif selama 12 minit dengan api sederhana tinggi. Pastikan penutup sentiasa tertutup. Apabila siap, bun sepatutnya mengembang, pucat, dan kenyal anjal, dengan permukaan licin dan tanpa tompok basah.


  • 7. Angkat pengukus dari api dan biarkan bun berdiri, masih bertutup, selama 2 minit sebelum diangkat keluar. Ini mengelakkan kempis secara mendadak dan mengekalkan serbuk roti yang lembut.

    Hidangkan bun ketika hangat, disusun dengan jarak antara satu sama lain supaya bahagian atasnya yang membulat kekal utuh. Bahagian luar sepatutnya putih dan lembut, sambungan tersembunyi di bawah, dan inti sepatutnya tampil sebagai pusat berkilat yang memberi sedikit apabila digigit kali pertama.
