  • Stok ayam, 280 g

  • Kicap, 22 g

  • Bawang putih, 6 g, dihiris nipis

  • Mi gandum, 80 g

  • Ayam, 60 g, dihiris nipis

  • Telur, 50 g

  • Minyak bijan, 4 g

  • Daun bawang, 8 g, dihiris nipis


  • Kaedah


  • 1. Satukan stok ayam, kicap, dan bawang putih dalam periuk sederhana. Didihkan perlahan di atas api sederhana dan kekalkan selama 4 minit, sehingga kuah menjadi harum dan sedikit menyerap rasa bawang putih.


  • 2. Dalam periuk kecil yang berasingan, didihkan air secara perlahan dan masukkan telur ke dalam air. Masak selama 7 minit untuk kuning telur yang lembut, kemudian segera pindahkan ke dalam air sejuk. Kupas dengan kemas dan ketepikan.


  • 3. Masukkan mi gandum ke dalam kuah yang sedang mendidih perlahan dan masak selama 3 hingga 4 minit, kacau sekali atau dua kali untuk mengelakkan ia bergumpal. Mi sepatutnya lembut tetapi masih mengekalkan sedikit kekenyalan di bahagian tengah.


  • 4. Masukkan ayam ke dalam kuah dan masak selama 2 hingga 3 minit, hanya sehingga hirisan menjadi legap dan terasa lembut. Jangan biarkan kuah mendidih kuat.


  • 5. Alihkan periuk dari api. Kacau masuk minyak bijan. Rasa kuah; ia sepatutnya bersih, umami, dan seimbang, dengan rasa kicap hadir tetapi tidak mendominasi.


  • Penyajian dan hidang


    Pindahkan sup mi ke dalam mangkuk yang telah dipanaskan. Belah dua telur dan letakkan dengan kemas di atasnya, kemudian akhiri dengan menaburkan daun bawang secara ringan di permukaan. Hidangkan segera ketika kuah masih jernih, mi dalam keadaan lembut, dan ayam kekal empuk.
