  • Postupak



  • 1. Skuvajte pirinač. U srednjoj šerpi pomešajte basmati pirinač, kokosovo mleko, vodu i so. Dovedite do blagog vrenja na srednjoj vatri, zatim dobro poklopite i smanjite vatru na tiho. Kuvajte 12 minuta bez podizanja poklopca. Sklonite s vatre i ostavite da odstoji, poklopljeno, 10 minuta. Zrna treba da budu mekana, odvojena i mirisna, bez vidljive preostale tečnosti.


  • 2. Napravite osnovu za kari. Stavite široki tiganj za sotiranje na srednju vatru i dodajte biljno ulje. Dodajte crni luk i kuvajte 4 do 5 minuta, povremeno mešajući, dok ne postane staklast i blago omekša. Dodajte beli luk i đumbir i kuvajte još 1 minut, samo dok ne zamirišu.


  • 3. Otvorite aromu začina. Dodajte kari u prahu i mešajte 30 sekundi. Začin treba blago da potamni i oslobodi prepečenu aromu, a da se ne zalepi za tiganj.


  • 4. Razvijte povrće. Dodajte paradajz, šargarepu, boraniju i papriku. Promešajte da se oblože začinskom osnovom, zatim dodajte kokosovo mleko, vodu i so. Dovedite do ujednačenog laganog vrenja, smanjite vatru na srednje nisku i kuvajte 10 do 12 minuta, povremeno mešajući, dok šargarepa ne omekša, ali i dalje zadrži oblik, a sos se blago ne zgusne.


  • 5. Završite kari. Probajte i po potrebi korigujte samo tako što ćete kuvati još minut duže radi veće koncentracije ukusa. Povrće treba da bude glazirano, sos povezan, a ukus kokosa zaokružen, a ne težak.


  • 6. Rastresite pirinač. Otkrijte pirinač i pažljivo ga rastresite viljuškom, tako da zrna ostanu cela i vazdušasta.
