Crema de xocolata

Una crema de xocolata rica i cremosa, feta amb llet, nata, rovell d'ou, cacau, sucre i vainilla. És similar a una base clàssica de crème anglaise o pot de crème, i se serveix freda o lleugerament tèbia.

Ingredients


  • Llet 70 g

  • Nata 45 g

  • Sucre 20 g

  • Cacau en pols 10 g

  • Rovell d'ou 20 g

  • Vainilla 15 g


  • Total: 180 g

    Instructions


  • 1. En un cassó petit, barregeu amb unes varetes la llet, la nata, el sucre, el cacau i la vainilla fins que quedi una mescla homogènia.

  • 2. Escalfeu-ho a foc mitjà fins que tregui vapor, però sense que arribi a bullir.

  • 3. En un bol, bateu lleugerament el rovell d'ou.

  • 4. Aboqueu a poc a poc la barreja calenta de cacau sobre el rovell mentre remeneu constantment per temperar-lo.

  • 5. Torneu la barreja al cassó i coeu-la a foc baix, remenant constantment, fins que espesseixi prou per cobrir el dors d'una cullera.

  • 6. Retireu-ho del foc immediatament i coleu-ho si voleu una textura més fina.

  • 7. Refredeu-ho abans de servir, o serviu-ho tebi com a salsa de crema.
