  • 120 g belog pirinča

  • 240 g vode

  • 2 g soli

  • 140 g pilećih grudi

  • 60 g pečuraka, tanko narezanih

  • 25 g crnog luka, sitno iseckanog na kockice

  • 8 g mladog luka, tanko narezanog

  • 6 g belog luka, sitno usitnjenog

  • 12 g putera

  • 8 g biljnog ulja

  • 10 g pšeničnog brašna

  • 12 g soja sosa

  • 2 g soli

  • 1 g crnog bibera

  • 70 g vode


  • Postupak



  • 1. Isperite beli pirinač u hladnoj vodi dok voda ne postane uglavnom bistra. Pomešajte pirinač, 240 g vode i 2 g soli u srednjoj šerpi. Dovedite do ključanja na srednjoj vatri, dobro poklopite, smanjite na najnižu temperaturu i kuvajte 12 minuta. Sklonite sa vatre i ostavite da odstoji, poklopljeno, 10 minuta. Zrna treba da budu mekana, odvojena i suva na površini.


  • 2. Osušite pileća prsa tapkanjem i začinite ih sa 1 g soli i 0,5 g crnog bibera. Zagrejte biljno ulje i 6 g putera u malom tiganju za sotiranje na srednje jakoj vatri dok puter ne zapeni. Dodajte piletinu i zapecite 3 do 4 minuta sa prve strane, zatim 2 do 3 minuta sa druge strane, dok blago ne porumeni i tek bude potpuno pečena. Prebacite na tanjir i držite na toplom.


  • 3. Smanjite vatru na srednju. Dodajte crni luk u tiganj i kuvajte 2 minuta, uz mešanje, dok ne postane staklast. Dodajte pečurke i kuvajte 4 do 5 minuta, dok ne puste svoju vlagu i ne počnu da dobijaju boju. Dodajte beli luk i kuvajte 30 sekundi, samo dok ne zamiriše.


  • 4. Dodajte preostalih 6 g putera i pšenično brašno. Mešajte neprekidno 1 minut da se formira svetla zaprška. Dodajte 70 g vode u ravnomernom mlazu uz mućenje kako biste sprečili grudvice. Dodajte soja sos, preostalu so i preostali crni biber. Kuvajte lagano 2 do 3 minuta, uz mešanje, dok sos ne postane gladak, blago zgusnut i sjajan.


  • 5. Vratite piletinu i sav sok koji je pustila dok je stajala u tiganj. Lagano kuvajte 1 minut, okrećući jednom, dok piletina ne bude obložena sosom i potpuno zagrejana. Na kraju umešajte mladi luk kako bi ostao svež i živopisne boje.


  • Serviranje i posluživanje


    Oblikujte pirinač uredno u sredini toplog tanjira ili plitke činije. Po želji isecite piletinu i rasporedite je preko pirinča. Kašikom prelijte sos od pečuraka preko i oko piletine, ostavljajući da deo pirinča ostane vidljiv. Poslužite odmah, dok je sos još sjajan, a pirinač i dalje rastresit.
