  • Postupak



  • 1. Pomešajte beli pirinač, vodu i so u šerpi. Pustite da provri na jakoj vatri, zatim poklopite, smanjite na najnižu temperaturu i kuvajte 12 minuta. Sklonite sa vatre i ostavite da odstoji, poklopljeno, 10 minuta. Zrna treba da budu mekana, odvojena i suva na površini.


  • 2. Dok se pirinač kuva, zagrejte biljno ulje u tiganju za sotiranje na srednjoj vatri. Dodajte crni luk i kuvajte 4 minuta, uz redovno mešanje, dok ne omekša i postane staklast bez boje.


  • 3. Dodajte beli luk i đumbir i kuvajte 30 sekundi, uz stalno mešanje. Dodajte kari u prahu i kurkumu i kuvajte još 20 sekundi, samo dok ne zamirišu i začini blago ne potamne u ulju.


  • 4. Dodajte pileća prsa i kuvajte 3 minuta, okrećući komade tako da budu lagano obloženi i neprozirni spolja. Dodajte šargarepu i paradajz, pa kuvajte 2 minuta, mešajući da paradajz počne da se raspada.


  • 5. Dodajte kokosovo mleko, vodu i so. Dovedite do laganog vrenja, zatim poklopite i kuvajte 8 minuta na tihoj vatri. Otklopite i kuvajte još 2 minuta, dok piletina ne bude tek skuvana, šargarepa mekana, a sos sjajan i blago zgusnut.


  • 6. Sklonite sa vatre i umešajte cilantro. Kari treba da bude aromatičan, skladan i svilenkast, bez sirove oštrine začina i bez viška tečnosti koja se skuplja u tiganju.


  • Serviranje



    Stavite pirinač blago van centra na zagrejan tanjir. Kašikom rasporedite kari pored i delimično preko pirinča, tako da se sos spusti među zrna, a da ih ne preplavi. Završite cilantrom ravnomerno raspoređenim po površini, tako da tanjir deluje čisto i da boje ostanu jasno odvojene.
