  • 1. Combine the sugar and 25 g carbonated water in a small saucepan. Set over low heat and stir for 1 to 2 minutes, just until the sugar dissolves completely and the liquid is clear. Do not allow it to boil.

  • 2. Remove from the heat and pass the syrup through a fine mesh strainer into a clean container. Let it cool for 2 minutes; it should remain fluid, with no visible crystals.

  • 3. Pour the cooled syrup into a chilled 330 g bottle or glass.
